This treat is so easy to make! Kids love it because it honestly reminds me of raw chocolate chip cookie dough, but without the refined sugar and raw egg. It’s hard for me to stop eating them – and it’s hard for my boys to understand that, no, they cannot have 20 of them.


No Bake Chocolate Chip Cookie Dough Cups {Gluten-Free}

Makes 18 cookie dough cups



  • 1/3 cup gluten-free oat flour
  • ½ cup almond meal flour
  • 1/3 cup xylitol (see note)
  • 1 scoop vanilla protein powder (see note)
  • ¼ teaspoon salt
  • 1 tablespoon melted butter
  • ½ teaspoon vanilla extract
  • ¼ cup cashew butter
  • ¼ cup unsweetened almond milk
  • ¼ cup chocolate chips (see note)



  1. In a mixing bowl, combine oat flour, almond meal flour, xylitol, protein powder, and salt.
  2. In a separate mixing bowl, whisk together butter, extract, cashew butter, and almond milk. Pour this mixture into the bowl of dry ingredients and stir together.
  3. Stir in chocolate chips.
  4. Place 18 silicone cupcake liners on a sheet pan. Fill each cupcake liner ¾ full with cookie dough.
  5. Place cookie dough cups in the fridge for at least 1 hour. Remove from fridge and serve.



  • Cups can be stored in the fridge for up to 3 days or in the freezer for up to 1 month.
  • Keep this recipe refined sugar free by using coconut sugar instead of xylitol and choosing a protein powder made of real wholesome ingredients, like this plant-based organic vanilla protein powder.
  • Choose chocolate chips or a chocolate bar made with unrefined ingredients, like these chocolate bars (I seriously love these, and so do my two kids)! If you want chocolate chips without much sweetness, these organic chocolate chips are also a great option for this recipe.
