Spiced Apple Biscuit Cobbler

I wanted to create a biscuit that was fluffy but also dense enough to hold its own next to cooked apples. If you’ve ever tried apples cooked in coconut oil, coconut sugar, and fall spices you certainly know they can steal the show. This biscuit recipe is not only gluten-free but also shines right alongside the spiced apples. They are incredibly tasty (thank you, butter), dense but also light, and pair perfectly with the spiced apples.
Also, I told my kids they could have some of this treat if they cleaned up the playroom. I was cruel and gave them a little taste before the incentive was announced. I’ve never seen them clean up a room so fast in my life. Cobbler bribery for the win.
There are also simple substitutes provided in order to make this dish vegan friendly without sacrificing flavor and deliciousness. You can also follow these tips if you prefer a dairy-free or egg-free treat. Either way you choose, it’s a dessert you should most definitely serve in the fall. It wouldn’t be the same without it!
Spiced Apple Biscuit Cobbler
1 serving is 1 biscuit with about ½ cup apple mixture
- 10 granny smith apples, peeled, cored, and sliced
- 3 tablespoons coconut oil
- 3 tablespoons lemon juice
- ½ cup coconut sugar
- 2 teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground ginger
- 1¾ cups almond flour
- 1 cup gluten-free oat flour (see note)
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup cold unsalted grassfed butter, cut into small pieces (see note)
- 1 egg (see note)
- ½ cup plain full fat greek yogurt (see note)
- 1 tablespoon maple syrup
- Preheat oven to 425F and set aside a greased 9×13 baking dish.
- Stir together apples, lemon juice, coconut sugar, cinnamon, nutmeg, and ginger in a large mixing bowl.
- Place a large saucepan over medium heat.
- Add coconut oil and apple mixture to the saucepan and cook, stirring occasionally, for 8-10 minutes, or until apples slightly soften and caramelize.
- Spoon cooked apples into the baking dish. Let cool while you make the biscuits.
- Combine almond flour, oat flour, baking powder, baking soda, and salt in a large mixing bowl.
- Cut butter into the flour mixture using a pastry cutter (you can also use a grater to create small pieces of butter). You will want pea-sized pieces of butter throughout flour mixture.
- In a separate bowl, whisk together egg, yogurt, and maple syrup until smooth.
- Pour wet ingredients into the bowl of dry ingredients and stir to combine.
- Use a large ice cream scoop to drop about 1/3 cup of biscuit batter on top of cooked apples, creating 12 biscuits total.
- Brush the tops of each biscuit with melted butter (or butter replacement).
- Bake in the oven for 16-18 minutes, or until tops of biscuits are golden brown. Let cool about 15 minutes then serve (vanilla ice cream makes a great topping).
- You may substitute oat flour for all-purpose flour or whole-wheat flour (note that it won’t be gluten-free with these changes).
- Make sure the butter is really cold (like right out of the fridge). This makes it easier to cut into the flour mixture.
- For vegan cobbler, replace butter with butter alternative, egg with an egg alternative (like ground flaxseed or chia seeds), and greek yogurt with plain full-fat dairy-free yogurt (like coconut or almond).
