Sweet Potato Wedges with Creamy Cilantro-Lime Sauce

Sweet potatoes on the grill are a simple and quick side dish that adds flavor and nutrition to any dinner. To achieve a similar result, you can cook the potatoes in a pan on the stovetop or a hot grill until they are soft, tender, and have great grill marks! For a pop of flavor, drizzle over some creamy, zesty sauce and enjoy.

Ingredients

Sweet Potatoes
  • 8 small sweet potatoes or 6 large - cut into ½-inch-thick wedges
  • 2 Tbsp. avocado oil
  • Salt to taste
  • Pepper to taste
  • Parsley leaves for garnish
  • Baby spinach leaves for garnish
Sauce
  • ½ cup sour cream
  • ¼ cup cilantro chopped
  • 2 Tbsp. lime juice
  • ¼ tsp. honey

Instructions

  • Preheat grill to low to medium heat.
  • In bowl, whisk together sour cream, cilantro, lime juice, honey, salt and pepper.
  • In mixing bowl, toss sweet potato wedges with avocado oil, salt and pepper.
  • Place potatoes on grill and cook 6-8 minutes, or until slightly charred. Flip and repeat on other side.
  • Plate wedges, drizzle on sauce. Serve sprinkled with parsley and spinach leaves.
