Sweet Potato Wedges with Creamy Cilantro-Lime Sauce
Ingredients
- 8 small sweet potatoes or 6 large - cut into ½-inch-thick wedges
- 2 Tbsp. avocado oil
- Salt to taste
- Pepper to taste
- Parsley leaves for garnish
- Baby spinach leaves for garnish
- ½ cup sour cream
- ¼ cup cilantro chopped
- 2 Tbsp. lime juice
- ¼ tsp. honey
Instructions
- Preheat grill to low to medium heat.
- In bowl, whisk together sour cream, cilantro, lime juice, honey, salt and pepper.
- In mixing bowl, toss sweet potato wedges with avocado oil, salt and pepper.
- Place potatoes on grill and cook 6-8 minutes, or until slightly charred. Flip and repeat on other side.
- Plate wedges, drizzle on sauce. Serve sprinkled with parsley and spinach leaves.
