Chocolate Almond Coconut Candy Bars

Forget the refined sugars, refined oils, and ingredients you can’t pronounce! These homemade chocolate almond coconut bars are a consistent family favorite treat and made with only 6 simple, wholesome ingredients that are easy to find.  And since these homemade candy bars are made with real ingredients, they taste loads better than artificial candy sold at the grocery store. Another bonus: they have fewer calories, carbs, and sugar that most store-bought candies.

Ahhhhhh a recipe I have wanted to create for a while. I don’t typically crave candy bars. BUT when I do, it is either an almond joy or Reese’s peanut butter cup. This recipe is a more delicious version of almond joy bars and consists of three easy-to-make layers: a homemade coconut layer, a melted chocolate layer, and a layer of almonds. Simple to make and quick to enjoy!

At times, I tend to overcomplicate the ingredients and method when I develop new recipes. My goal here was to create an almond joy-inspired treat using minimal, wholesome ingredients that requires little time to make. It is so simple that even your kiddos can help. The problem is keeping them from eating everything prior to its completion. Nash: “mommy can I have one bite of chocolate?” Beck: one bite chocolate momme, PLEASE!”. Me: …… 😐🤫

Luckily, without the extra help of adorable little hands, only 5 minutes of your time is needed to whip up this recipe. And y’all –  they’re so delicious! I’m not kidding. A real winner here, folks. I have to practice some serious self-restraint so I don’t eat 3 bars at once. I also need extra mediation because it’s one that my kids incessantly want at all hours of the day.

 

Chocolate Almond Coconut Candy Bars

 

This recipe is free of dairy, eggs, soy, wheat, gluten, grains, refined sugars, refined oils, & peanuts.

Serves 16

Nutritional info for 1 serving (1 square): 216 calories, 2.2g protein, 15.8g carbs, 17.8g fat, 9.9g sugar, 3.3g fiber

 

Ingredients

  • ½ cup coconut oil
  • 2 cups shredded coconut
  • ½ cup coconut flour
  • ½ cup maple syrup (see notes)
  • ½ cup chocolate, melted (see notes)
  • 1/3 cup almonds

Method

  1. Line an 8×8” baking dish with parchment paper and set aside.
  2. Melt coconut oil in a large mixing bowl.
  3. Add shredded coconut, coconut flour, and maple syrup to the mixing bowl. Stir until all ingredients are well combined.
  4. Spoon mixture into prepared pan and evenly press down, forming a flat layer.
  5. Melt chocolate chips and spread over the coconut layer, creating a smooth chocolate layer.
  6. Chop the almonds and sprinkle on top of the chocolate layer.
  7. Let bars sit in the fridge until the chocolate hardens. Evenly cut into 16 squares and enjoy.

Notes:

  • Substitute maple syrup with sticky sweetener of choice, like honey, agave, or brown rice syrup.
  • Choose chocolate chips or a chocolate bar made with simple ingredients and no refined oils or sugars, like these HU Dark Chocolate Bars that I get from Vitacost.
