This refreshing and simplified twist on fudge is both delicious and healthy since it is only made from clean, wholesome ingredients and free of gluten, dairy, refined sugar, refined oils, and soy. Contrary to what is often seen at the grocery store, there are also no artificial colors used in this recipe. That beautiful purple color is from one ingredient, maqui berry powder. It will appeal to many and is 100% kid-approved!

What is a maqui berry? I’ve not ever heard of it, until recently. I use fresh fruit in as many recipes as I can. However, certain recipes that do not need extra moisture have forced me to search for a healthy alternative to fresh fruit. Ideally, just the fruit would be great – but I didn’t think I would locate anything of such without all the added flavors and colorings. Why do I want to avoid those? Anyways, to my pleasant surprise, some companies do produce a product that is healthy enough for me. In fact, the only ingredient in the one I found is organic raw maqui powder. I also make my own “fruit powders” by simply mixing freeze-dried fruit in a food processor until a fine powder is formed (so you can use another type of fruit if you’d like – see how I used freeze-dried strawberries to make my 3 ingredient strawberry frosting) The maqui better does produce a rich, tart berry flavor this recipe. And that color – you can’t get any more vibrant than that!

Back to explaining to you what in the world a maqui berry is…found in South America this dark purple fruit is now known as a “superfood” because it has endless health benefits from the high anti-oxidant properties. From reducing inflammation to aiding in blood sugar, this berry will now be a staple in my pantry. I’ve added it to oatmeal, yogurt, breads, cakes, smoothies, and more. It adds a bold berry flavor to anything its added to and beautiful color to immediately draw someone’s eye. Another pro to the one I found – no food processor is needed. It is already in powder form and ready to use!

I am utterly obsessed with lemon and berries flavors paired together and, I’m not going to lie, fudge wins my heart also. This fudge is the meaning of winning. It only takes 6 ingredients to make. There is not one thing artificial about it. Kids love it. Adults love it. Even my dog loves it (whoops). It only takes 8 minutes to make (minus freezing time). And it’s so so refreshingly yummy.

Berry Lemonade Freezer Fudge Cups

makes 20 fudge cups

 

Ingredients

  • 3 cups unsalted cashews
  • 1½ cups coconut cream
  • ¾ cup maple syrup
  • 1/3 cup lemon juice
  • 2 tablespoons lemon zest
  • 2 tablespoons berry powder (see notes)

 

Method

  1. Place cashews, coconut cream, maple syrup, and lemon juice in a food processor or blender.
  2. Turn processor on and blend thoroughly for about 6-8 minutes, stopping to scrape the sides of the bowl a few times, or until mixture is completely smooth.
  3. Set two medium-sized bowls aside and pour ½ of the mixture into one of the bowls (about 1½ cups) and the remainder ½ of the mixture (about 1½ cups) into the second bowl.
  4. Add lemon zest to one bowl of mixture and whisk until well combined.
  5. Add berry powder to the other bowl of mixture whisk until well combined.
  6. Spoon about 2 tablespoons lemon fudge mixture into a mini cupcake mold. Repeat until 20 molds are ½ filled.
  7. Next, spoon about 2 tablespoons berry fudge mixture into a mini cupcake mold, filling the mold to the top. Repeat until 20 molds are filled completely. (see notes)
  8. Place cups in the freezer overnight, or until fudge is set and completely solid.

 

Notes:

  • I used this raw organic maqui berry powder – you can also use any freeze-dried berry that’s been processed down to a powder. You can do this yourself by processing freeze-dried berry of choice until a thin powder forms. I’ve used strawberry powder to make this delicious and easy 3 ingredient strawberry frosting.
  • If you don’t have mini muffin molds, you can also use an 8×8 inch dish lined with parchment paper. Simply spoon all of the lemon fudge mixture into pan first, spread down, then spoon the berry fudge mixture on top of the lemon mixture. Smooth down and place in the freezer until set.
