Refreshing, sweet, and tangy pies are perfect for the summer, especially when they’re a quick, cool, no-bake treat! All you need is about 15 minutes and you’ve got yourself a healthy little dessert packed with delicious flavor and belly-satisfying protein.
Mini Lemonade Pies
Makes 8 mini pies
Ingredients
Crust
- 1/3 cup oat flour
- ¾ scoop vanilla protein powder (see note)
- 2 tablespoons coconut oil, melted
- 1 tablespoon water
Pie Filling
- 2 tablespoons coconut oil, melted
- 5 oz. plain cream cheese
- 1/3 cup lemon juice
- Zest of 1 lemon
- 2 scoops vanilla protein powder
- ¼ cup xylitol (see note)
- 1 teaspoon vanilla extract
Method
1. Place 8 silicone cupcake liners on a flat, freezer friendly dish and set aside.
2. Combine crust ingredients together in a small bowl and mix until well combined and crumbly. Press about 1 tablespoon of crust into each silicone liner, flattening down with your fingers, until all liners are filled with crust.
3. Add all of the pie filling ingredients to a blender or food processor. Mix until smooth.
4. Evenly pour pie filling into each cupcake liner until each liner is about 2/3 full.
5. Place pies in the freezer for at least two hours. When ready to serve, remove pies from freezer and liner. Let sit at room temperature for 5 minutes. Enjoy!
Notes
- Look for a vanilla protein powder made of wholesome ingredients, like this plant-based organic vanilla protein powder.
- Replace xylitol with coconut sugar for a recipe free of refined sugar.
